Watermelon And Goat Cheese Salad Recipe




Ingredients for 2 Watermelon Salads:
  1 ripe seedless watermelon, 4 oz. goat cheese, 2 oz. toasted pumpkin seeds, little spring mix greens, honey-balsamic reduction for decorating the plates.
Recipe
Cup 10 strips of watermelon for each salad, 1/3-inch thick and 3-inches long. Place a pinch of the spring mix in the center of each plate and arrange the watermelon in the manner seen in the picture. Crumble the goat cheese over the watermelon and sprinkle with the pumpkin seeds. Decorate with the sweet balsamic reduction and serve cold. Tip: Cool down the plates in the refrigerator before serving to help keep the salad cold while on the table. This watermelon recipe may seem odd to some of you, but I can assure you that it tastes great. You should try it.
